I like to go out for breakfast on the weekend. I love breakfast dates. I think they're underrated. Today though, I put my foot down with myself and told myself I didn't have the cash for that one right now! I did however, have all the ingredients to make a neat little cafe style brunch at home!
Having worked in the restaurant industry so long, I should be more confident in my own cooking skills but honestly, I can be so much of a perfectionist that it stresses me out. This was the first time I've made hollandaise on my own, at home. Was it perfect? No. The flavour was lacking but some post-cooking seasoning fixed that. But the texture & consistency were spot on. It's a good base that can be worked on!
