Trying to eat more veggies? We make veggie bowls EVERY Monday night. We switch up the veggies we roast/steam and we switch up the base (quinoa, rice noodles, basmati rice, potatoes). I know what it's like to get low-key anticipation or anxiety before every mealtime. . ❌On the one hand, you need to eat to live. And food should be enjoyable, right? . I didn't always feel that way, and many of you reading this know exactly what I mean. . ❌When food becomes a potential adversary, each day takes so much more effort. . For some people it's FODMAPs, or gluten/dairy/eggs etc....or histamine promoting foods. For others of us it's "carbs", fats, or calories in general! I fell mostly into the later group! . While there was a time in my life where certain foods made me gassy (this was long before I had any idea of what FODMAP containing foods were!), my main concern during my pre-teens and teen years was calories and then carb content of food. . Was this or that going to make me fat? Slowly, one food or group after another became something to leave out, giving me an artificial sense of control over a body I saw as wild and unpredictable. . I love this wild and unpredictable body and all the adventures it has brought me on and thru! And I LOVE food. . Switching up my mentality to one of using food as a source of self love, nurturing, and connection (to the earth, to my body, to people I love) was instrumental in shifting my fear into empowerment and love. So, I feel you. I do. . For just one meal today, can you really see each bite you are taking, as vital energy, as vitamins, minerals, nutritious fats and proteins and carbs that are going in to nurture and revitalize every cell in your body? . A simple salad of roasted butternut pumpkin and quinoa salad with a dollop of Greek yoghurt. Cut pumpkin into quarters drizzle with olive oil and season with salt and pepper roast in oven until cooked. In a deep pan heat a drizzle of olive oil and fry off 2 cloves garlic crushed, 1 red onion diced, 1 tsp ground turmeric and half a tsp onion powder, then add in 1 cup of quinoa rinse under cold water first add to the pan and fry off for a minute then add in 2 cups of veggie stock. Cook quinoa until all the liquid has evaporated if the quinoa is still not cooked add a little water as needed and cook until quinoa is still just tender. Serve over pumpkin add a dollop of Greek yoghurt can also add feta or goats cheese instead of yoghurt. whipped up a big batch of this ALMOST PALEO SECRET INGREDIENT CHILI & it was honestly probably my favorite meal of the trip! i also felt confident knowing that i was getting essential nutrients from this single dish because of a secret ingredient... BEEF LIVER!! i probably already know what you’re thinking. liver?!?! grossss!! the name alone can be a turn off, let alone the taste, but trust me on this one. liver is packed with so many important vitamins like A, B12, iron, folate, and so many more. because the liver is the detox organ of the body, it is important to eat high quality liver so you can avoid putting those toxins. with the amount of spices and flavors in this chili, you can’t even taste it! (and i had a friend try it who does NOT like liver). this recipe took about 10 minutes to prep and 20 minutes to cook in the instant pot. SO EASY! ingredients: 1 sweet onion, chopped 1 lb grass fed ground beef (@belcampomeatco ) 1/2 - 1 lb grass fed beef liver, finely chopped or grated (@belcampomeatco ) 1 can black beans, rinsed 26 oz diced tomatoes 2 tbsp tomato paste 1 1/2cup beef bone broth (i used @osso_good_bones ) 3 tbsp cumin 1-2 tbsp chili powder (depending on spice tolerance) 1 tbsp garlic powder 1/2 tsp paprika 1/2 tsp salt ground black pepper to taste directions: turn the instant pot to sauté and sauté onions until translucent once cooked, add ground beef and cook until mostly browned add in liver and continue to sauté until all meat is brown add in bone broth, tomato paste, and tomatoes and stir until mixed add in remaining spices and stir until combined place the lid on, making sure the top is set to “seal” and change setting to soup and timer to 20 minutes once done, vent the steam and let cool for 5 minutes serve immediately or save in the fridge for easy meals throughout the week happy monday friends! let’s make this week a good one 💛

Mondays, am I right? A rather surprising liver loving food is, yes, COFFEE ☕️ Researchers still aren’t sure if it’s the caffeine specifically, antioxidants, diterpenes, or a combination of compounds found in coffee, but consuming around 2 cups of coffee per day may have a protective effect on liver enzymes and a decrease in mortality from liver disease. Recent studies even include smokers and those prone to alcoholism and still found coffee to be helpful in liver disease and liver related mortality! The catch ✨ caffeine intake can impact people very differently in other ways (like the ability to sleep) depending on one’s epigenetic make-up. It’s also rather acidic to the body, so including alkalizing foods into the diet is crucial for coffee drinkers (think most fruits and veg!) So, if you’re someone who feels gut aches or jitters when you drink coffee, switching to herbal, black or green tea might benefit you more! Also, adding too much cream or sugar might have a counter effect as it would negatively impact your blood sugar. I personally feel good drinking 1-2 cups with a bit of maple syrup and cashew milk unless I’m feeling anxious!! 🤗 #eatyoungnutrition #eatandglow

how do you feel about a plant based diet? 🍅🥦🍋🍠🌽🍆 Why are you for or against it? as many of you know I'm vegetarian, leaning more toward vegan. Yesterday I watched the documentary The Game Changers which caused me to seriously question whether I should continue consuming dairy. 🤔 I haven't made any decision to cut dairy out completely yet, but after seeing its impact on the body and how much dairy increases the likelihood of heart disease and cancer and how detrimental the effects of dairy farming are in the planet, it's definitely something to consider. * Today is the first truly #mellowmonday of the year for me, and was made even more so mellowest of lunches! 🙂 Don't be fooled by the overwhelming red color (you'd think I would've had the presence of mind to realize tossing grated beets in there would make it look like a crime scene lol 😂), this dish packs a ton of greens, plant based protein and oodles of flavor. Happy Monday. 💜 * Details: in my bowl is a stir fry made out of garden fresh broccoli rabe, red and golden beets, black beans, chickpeas, @bobsredmill farro and onions and seasoned with a fajita spice blend, garlic powder and S&P then topped with walnuts and avocados.

I call this peanut butter cookie dough-gurt dip!! It's been satisfying my sweet tooth big time and is basically just @siggisyogurt with a few other ingredients and kind of tastes like cookie dough dip? Loving this new dairy free yogurt because it's made with simple ingredients, and it even strain specifies the types of good bacteria in the yogurt. Happy gut = happy me! Since moving away from being hardcore #dirtyketo I decided to try 90% plant based. 👉🏼My health, digestion, energy and mental clarity have improved a lot. Cutting meat and eggs was hard, and wasn’t quite right for me, and the post by @meowmeix below is a great example of how I’ve shifted focus... (minus the Spinach). - Eat more, weigh less! 🌱 Both omnivore & vegan diets can be either healthy or unhealthy, depending on your approach!⠀⠀ .⠀⠀ On the left side there’s the straw man example of the omnivore diet that gets used all too often. Sure, maybe some eat like this, but it’s clear this is an unfair representation of the proper approach (tips below).⠀⠀ —⠀⠀ Now the right side of this post is a great representation.. Fill your plate with mostly veggies like you’re a vegetarian, but just add a little high quality meat. —⠀⠀ Tips for the Healthy Omnivore:⠀⠀ 1. Make meat a side dish rather than a main dish. ⠀⠀ 2. Choose organic grass-fed beef or bison (I’ve been ordering Yak lately), pastured cage-free poultry & eggs, wild fish or other game when possible. ⠀⠀ 3. When you don’t know the source (eating out), choose lower-fat cuts of meat. Toxins accumulate in animal fat.⠀⠀ 4. Try and source quality meat from local farmers (farmers markets) or from online vendors with quality practices. ⠀⠀ 5. Avoid processed meats with nitrites/nitrosamines and high amounts of table salt. There are nitrite-free versions of bacon and sausage available. ⠀⠀ 6. Take a day off..
