Spinach & Broccoli Calzones 🥦 So tasty and unbelievably simple. A garlicky mix of spinach and broccoli with melty mozzarella, Ricotta, and Parmesan cheeses wrapped in perfectly golden pizza dough. 🤤 Doesn’t get much better than that. • • Serves 4 Ingredients: 1 cup Frozen Spinach thawed and liquid squeezed out 1 cup cooked Broccoli florets rough chopped 1 cup shredded Mozzarella cheese 1/2 cup grated Parmesan cheese 1 cup Whole Milk Ricotta cheese 2 Garlic Cloves minced 1 Egg plus one yolk divided 1 tbsp Olive Oil 1 tsp Dried Oregano 1/2 tsp Salt 1/4 tsp Pepper 1 lb Store Bought Pizza Dough • Method: 1. Adjust oven rack to lower middle position and preheat oven to 500°. Line a baking sheet with parchment paper. 2. In a large bowl, combine spinach, broccoli, mozzarella, Parmesan, ricotta, garlic, egg yolk, olive oil, oregano, salt and pepper. Stir to combine and mix well. Set aside. 3. Divide pizza dough in half and roll each half out to a 9-inch circle on a lightly floured surface. You could also buy a rectangle roll out pizza dough and just cut it in half. 4. Place dough halves on the baking sheet and spoon half the spinach mixture on each leaving about 1 1/2 inch borders. 5. Beat whole egg with 1 tbsp water in a small bowl. Brush the egg wash on edges of half the pizza dough. Fold dough over (in half) and crimp edges until completely sealed. Cut 5 small slits in the top of the dough, brush with egg wash all over, and bake for 15 minutes until golden all over. Remove from oven and allow to rest 5 minutes. Slice up and serve warm. • Serving suggestion: serve with heated Marinara sauce.

Happy Sunday! I hope you all had a great weekend! We’ve been so busy with our twins’ 5th bday party this weekend and I’m just so happy that it all went well and everyone seemed to have a blast! Since my husband and I stayed in all weekend, we used Saturday night as an at home “date” night, with him cooking one of the most delicious meals. This is a vegan gumbo served over @traderjoes brown rice medley with the most scrumptious vegan cornbread. We’re going to New Orleans in a couple of weeks and this meal definitely got us in the mood! . . . DEETS: • the recipe for vegan gumbo with andouille red bean “meat”balls is from @connoisseurusveg - We both LOVED the gumbo but the andouille “meat”balls came out a little gooey on the inside and were not our favorite. We also thought they weren’t necessary with everything else we had... • the cornbread recipe is from @nora_cooks_vegan_ and it is seriously AMAZING!

You could always swap out the chocolate for chopped nuts, or omit all together. . . Healthy Zucchini Bread 1 medium zucchini, shredded (1 heaping cup) 2 eggs 1/2 cup creamy almond butter (or any nut butter) 1/4 cup maple syrup 1 tsp vanilla extract 3/4 cup almond flour 1 tsp cinnamon 1/4 tsp nutmeg (optional - adds a lil kick) 1 tsp baking soda Pinch of salt 1/2 cup chopped dark chocolate - or as much/little as you want! . . Directions Heat oven to 350. Line 8x4 baking tin with parchment paper. In a mixing bowl, combine wet ingredients until well combined. Then add in dry ingredients and mix. Fold in chocolate. Pour into pan and top with more chocolate. Bake for 30-45 minutes or until toothpick comes out clean.

INGREDIENTS Chia pudding 200 ml almond milk 4 tablespoons chia seeds approx. 50g 200 g coconut or soy yogurt maple or agave syrup to taste 1 teaspoon maqui berry powder 1/2 cup fresh raspberries Topping 200 g coconut or soy yogurt berries INSTRUCTIONS Whisk together 200 ml almond milk, chia seeds, and sweetener (if using) in a bowl. Let it sit for 5 minutes and then whisk again to prevent it from clumping. Let it sit at room temperature for 45 minutes. Add 200 g coconut/soy yogurt and 1 teaspoon maqui berry powder and stir well until combined. Serve in jars, add fresh raspberries, top with coconut/soy yogurt and fresh or frozen berries. Enjoy! I’m a huge fan of restaurant sweet potato fries🍠with chipotle sauce but most of those sauces are made with unhealthy ingredients and oils. So tonight I made @apinchofplants sweet potato fries with chipotle sauce🙌🏻 This was the best sauce I’ve ever had!!! For the chicken, I dipped the strips in egg and then seasoning and oven baked at 425 degrees for 20 minutes. For the seasoning I used - almond flour, garlic powder, paprika, ground flax, parsley, thyme and salt. Served it all with a spinach salad🥗because the more plants the better! Happy Sunday!

I’ve totally embraced fall...pumpkin and squash has featured prominently in my meals the past few days. But today, sun shining brightly and warmer temperatures, inspired a summery salmon Sunday dinner. simple pleasures 🥜🍞⠀ ⠀ when we get hung up on the “nutritional value” of foods, we lose out on simple pleasures. we start to think about food more than we actually need to, which is a waste of our energy. we endlessly hear that foods like white bread, iceberg lettuce, candy, chips, etc. have “empty calories” or “no nutrition.” we have to tune that shit out. ⠀ ⠀ a calorie is a measure of energy, and even foods deemed “empty calorie foods” provide energy. when we get so zoomed in on our single meals, we miss the whole point: ⠀ ⠀ ❗️see the patterns, not plate❗️⠀ ⠀ this meal is one of around 21 or more i’ll have all week. it’s not the perfect plate that fuels you; it’s the consistent, sustainable habits and patterns that matter. ⠀ ⠀ my simple pleasure food is a white bread PB&J with regular ol’ crunchy PB, strawberry jelly, and some fruit if you’re feeling feisty. what’s yours?

| Thai Green Curry | Instructions | Read directions through head to tail before starting. Link in bio for full recipe. 1. Get out the largest pot you own, something with a wide bottom and tall sides 2. Slice the onions, mushrooms, and bell peppers into pencil-width slices, tossing into the large pot as you go. (stove not turned on) 3. Cube tofu and set aside.  4. (If using) mince garlic 5. (if using) slice zucchini or eggplant into half-moons 6. Fill a cup with water and place next to the stove where you’ll be working.  7. Add 2 tsp coconut oil and 1/2 tsp salt to pot with vegetables, set over stove, and turn heat to medium-high 8. Your goal is to cook the onion/mushroom/pepper mixture aggressively until they are very soft and brown. This will take ~ 15 minutes. Keep adding water in 1/4 cup increments when the pot is dry and the ingredients start sticking to the bottom. I added 1.25 cups in total. Be sure to stir every couple of minutes. If there is no browning after 7 minutes, turn up your heat.  9. If using garlic and zucchini, add after 10 minutes when the onion mixture is about well on its way to browning. 10. Once onion mixture is very soft and brown, add coconut milk, curry paste, and tofu. Stir gently to combine without mashing tofu. 11. Bring back to a simmer and taste for salt.  12. I made these muffins with @simplemills Pumpkin Muffin mix - which made the muffins crazy easy to make (find it at @wholefoods!). Topped them with a chocolate drizzle because the back of the box said it was an optional way to mix it up and I was like… chocolate 😍 I love having these as go to afternoon snacks for the week! Portobello Mushrooms were meant to be stuffed. They are the perfect vessels to be filled with anything you can dream of. Stuff. Bake. Eat.... love it when that happens! These beauties are a rif on lasagna. Filled with all the familiar flavors of your favorite lasagna, they are the perfect low carb version of our favorite classic! Don’t want a vegetarian version? That’s easy enough! Just add a lb of ground beef or chicken or add some chopped up cooked chicken to the mixture to bulk up the protein👌 : . . . : Spinach Lasagna Stuffed Portobellos : : : 6 Portobello mushrooms 1 1/2 cups ricotta cheese 1 large egg 10 oz frozen spinach thawed and squeezed to remove excess liquid 2 cups shredded mozzarella divided ¾ cup shredded Parmesan cheese divided Zest of 1 lemon 2 tbls chopped fresh basil 1/2 tsp garlic powder ¼ tsp crushed red pepper flakes Pinch of nutmeg Salt and pepper to taste 1 cup marinara sauce Chopped basil for garnish * Preheat oven to 400F. Cover a sheet pan with parchment or foil and set a wire rack on top. With a spoon, gently scoop out the gills inside the mushrooms. Discard the gills and set the mushrooms aside. In a bowl, combine the ricotta, egg, spinach, 1 cup of mozzarella cheese, ½ cup of the Parmesan cheese, lemon zest, basil, garlic powder, red pepper flakes, and pinch of nutmeg. Stir until well combined. Divide the ricotta spinach filling between each mushroom cap. Top each mushroom with ¼ cup marinara sauce and the additional mozzarella and Parmesan. Season with salt and pepper, to taste. Made with green chile, chicken, corn and blended chickpeas to make it thick and creamy. This easy white chicken chili recipe can even be made in the slow cooker and is bound to become a new family favorite. Serve with avocado, tortilla chips and cilantro. ✨by @ambitiouskitchen ~ ½ tablespoon olive oil 1 medium white onion, chopped 1 can mild green chiles (or sub 2 seeded and diced jalapenos) 1 tablespoon ground cumin 2 teaspoons chili powder ¼ teaspoon coriander 1/4 teaspoon dried oregano 4 cups low sodium chicken broth 2 (15 ounce) cans chickpeas, rinsed and drained ¾ teaspoon salt, plus more to taste Freshly ground black pepper 3 cups shredded, cooked chicken breast (can also used shredded rotisserie chicken) ½ cup frozen corn 1 medium lime, juiced 1/3 cup fresh, chopped cilantro For garnish: Tortilla strips or chips Extra cilantro Avocado slices Extra lime wedge Instructions Add olive oil to a large dutch oven or large pot and place over medium high heat. Add onion and green chiles and cook until softened, about 3-4 minutes. Next stir in cumin, chili powder, coriander and dried oregano; allow the spices to cook for 30 seconds, then add in chicken broth, 1 can of drained chickpeas (about 1 1/2 cups chickpeas), uncooked chicken breast and salt and pepper. Simmer on medium low heat for 20-30 minutes. After 20 minutes, remove the chicken with a slotted spoon and shred with two forks. Next add in fresh lime juice and cilantro. Finally, add the remaining can of rinsed and drained chickpeas(1 1/2 cups chickpeas) and ½ cup water (or broth) to a blender. Blend until somewhat smooth, adding a little more water if necessary. Pour blended chickpeas into soup pot and then stir in the corn. Allow soup to cook and simmer for 5-10 more minutes. Serve with tortilla chips, an extra lime wedge and avocado if you’d like. Serves 4. Hello folks! It's not a lazy Sunday weekend for us. Just too much to do. Lil Man's exam is next week, so he's studying 😁. That makes us parents equally busy, giving him the support and coaching when needed. 🤗 Instead of eating out, at one of our favourite joint with a delicious cuppa...we decided to stay in and make our own. I wanted crispy bacon in eggs so it is what we had! We baked the bacon in oven till crisp and added the crumbled pieces to the omelette cooked with diced onion and tomatoes. 𝐁𝐮𝐟𝐟𝐚𝐥𝐨 𝐂𝐡𝐢𝐜𝐤𝐞𝐧 𝐁𝐨𝐰𝐥𝐬 👀 Buffalo chicken goes with just about anything in my opinion.. but one of my all time favorite meals is buffalo chicken with whole wheat macaroni noodles, broccoli and cauliflower. This is a quick easy recipe you can make for yourself or for your family, takes around 30-35 minutes to make depending how you like your chicken. 𝐓𝐞𝐫𝐢𝐲𝐚𝐤𝐢 𝐁𝐫𝐮𝐬𝐬𝐞𝐥 𝐒𝐩𝐫𝐨𝐮𝐭𝐬 🤩 my new FAV recipe ✨ I typically make my Brussel sprouts with balsamic but this week I decided to use something different and...it was amazing! 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬: 1 bag of Brussel sprouts (clean / trimmed), 1 tbsp olive oil 1/4 cup teriyaki sauce 1 garlic clove 1 tbsp herbs 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬: Clean and trim ends of Brussel sprouts On medium heat let the Brussel sautée in oil for 5-7 minutes Add garlic and add teriyaki sauce and cover for 5-7 more min Stir occasionally Add herbs for topping This recipe goes perfect over rice with chicken, I even ate some as a snack yesterday!
