Recipe:
Sauté 1 large onion (small dice) and 1 cup chopped carrots (medium dice) in a little olive oil (or veggie broth in non-stick) on medium-high until onion starts to brown and stick to pan. Reduce heat and add 3 minced garlic cloves, 2 tsp finely grated ginger, 1-2 minced red chili peppers, 1 tsp cumin, 1 tsp coriander, 3/4 tsp cinnamon, 3/4 tsp turmeric, 1/4 tsp chili powder. Cook another 30 seconds until fragrant. Mix in 2 tbsp tomato paste and sauté 30 seconds more while mixing. Add 1-15oz can crushed tomatoes and 4 cups low-sodium vegetable broth. (Optional: blend until smooth before adding sweet potato and lentils.) Add 1 cup red lentils and 1 large sweet potato (roughly chopped into slightly larger than bite sized pieces). Stir and bring to a boil. Reduce heat and simmer, partially covered, until sweet potato just starts to soften. (Add more vegetable broth as needed.) Add bite-sized cauliflower florets from 1 head cauliflower and cook until cauliflower and sweet potato are just about fork tender. Stir in 1-14oz can coconut milk and heat gently until warmed through. Remove from heat and mix in 2 tbsp lime juice and 2 tsp lime zest. Add salt and black pepper to taste.

(serves 3) 
10oz pasta of choice
1 medium red onion, chopped
2 cloves garlic, minced
7oz mushrooms, chopped
2 tsp ginger paste
1/2 can coconut milk
1/4 cup oat milk or any other plant based milk
2 tbsp tamari
1 tsp cumin
1 tbsp gluten-free flour
Cook the pasta according to packaging instructions. Meanwhile, sauté the onion, garlic and ginger paste for 3-4 minutes. Add the mushrooms and sauté for a few minutes more until they start to soften. Pour in the coconut milk and oat milk together with the tamari and cumin, stirring briefly over a medium heat to warm up. Drain and rinse the pasta, transferring to the frying pan with the gluten-free flour. Stir for a couple minutes to thicken the sauce. Serve and enjoy.

Recipe: Chop up cauliflower into small to medium sized pieces (bite size but not too tiny either). wash and pat dry and set aside.
in a bowl put together dry spices:
1 tsp of cumin.
1 tsp of onion powder
1/2 tsp of salt
1 tsp of garlic powder.
toss florets inside and toss within the bowl to coat.
add 1 cup of coconut milk and set aside to set for 10 - 15 minutes.
afterwards, turn your oven to bake and bake on 375 for 10 minutes and then broil for 2 minutes on low.

Meanwhile
dice up 1 onion and throw into a deep pan coated with olive oil or avocado oil. Cook on medium - low.
let it caramelize (until the onions are a soft brown) and throw in: 1/2 tsp of cumin, 1/2 tsp of turmeric, 1 tsp of coriander paste, 1 tsp of ginger and garlic paste, juice of half a lemon, 1/2 tsp of salt. Keep cooking until fragrant.
Add 1.5 cans of coconut milk (full fat) and bring pan to a boil. add 1 can of tomato paste. Keep stirring and reduce heat to medium. Keep stirring until thickened. Add more salt, pepper or lemon juice if needed. Stir in your cooked cauliflower and gently coat them with the sauce, turning your spoon in the batter to allow the florets to absorb and coated.
Add some coriander leaves and chilies and naan and you've got an amazing meal! Enjoy!

Recipe (serves 2)⁣
🌱Ingredients:⁣
- 16oz [454g] mini sweet peppers, washed & halved⁣
- 7oz [200g] firm tofu, drained & pressed⁣
- 2 cloves of garlic, minced⁣
- 1 small carrot, finely shredded⁣
- 1/2 teaspoon salt⁣
- white pepper to taste⁣
- corn starch or tapioca starch for dusting⁣
- oil for cooking⁣
⁣
1. To prepare the mini sweet peppers, wash, cut them into halves & remove the seeds. Pat them dry with a paper towel.⁣
2. For the tofu, place pressed tofu in a food processor/blender and process until you get a smooth texture, then set aside.⁣
3. In a heated non-stick pan with a teaspoon of oil, saute garlic until aromatic, then add carrot & continue to cook for another minute or so. Remove them from the pan & add to a mixing bowl along with tofu mixture. Mix with a spatula until well combined, then season with salt & white pepper.⁣
4. Coat the inside of the peppers generously with corn starch & shake off excess. Take a spoonful of tofu filling & stuff into the pepper, then dab some cornstarch on the filling (optional step). Repeat with the remaining ingredients.⁣
5. To cook the peppers, heat a non-stick pan with oil, place pepper with tofu filling side down. Pan-fry over low-medium heat until golden brown. Flip & cook the pepper for another minute or so. ⁣
6. Serve warm as-is or with a sweet chili dipping sauce.⁣

Add 7 roughly chopped sun dried tomatoes (type that comes in oil) and sauté a few more minutes. Add 2 sliced garlic cloves and cook another 30 seconds. Add 1 cup hummus and 1/2 cup pasta cooking water. Stir and cook on low a few more minutes. (Optional: blend until smooth, adding more pasta water as needed. Return to saucepan.) To prepare the mini sweet peppers, wash, cut them into halves & remove the seeds. Pat them dry with a paper towel.⁣ 2. For the tofu, place pressed tofu in a food processor/blender and process until you get a smooth texture, then set aside.⁣ 3. In a heated non-stick pan with a teaspoon of oil, saute garlic until aromatic, then add carrot & continue to cook for another minute or so. Remove them from the pan & add to a mixing bowl along with tofu mixture. Mix with a spatula until well combined, then season with salt & white pepper.⁣ 4. Coat the inside of the peppers generously with corn starch & shake off excess. Take a spoonful of tofu filling & stuff into the pepper, then dab some cornstarch on the filling (optional step). Repeat with the remaining ingredients.⁣ 5. To cook the peppers, heat a non-stick pan with oil, place pepper with tofu filling side down. Pan-fry over low-medium heat until golden brown. Flip & cook the pepper for another minute or so. ⁣ 6. Preheat oven to 400F. Mix 2 lb shrimp with 1/4 cup olive oil, 4 tbls melted butter, 6 cloves chopped garlic, 1 tsp chili flakes, 1/2 cup white wine and Roast the shrimp on a sheetpan  in one layer for 8 minutes. While that’s roasting, boil a pound of linguini.....Drain the pasta, save 1/2 cup of pasta cooking water, marry the pasta and shrimp and add the juice and zest of one large lemon, cooking water, 1/4 cup chopped basil and 1/2 cup chopped parsley. 
Mix to combine all those magical flavors, sprinkle with 1/2 cup of grated parmesan cheese and grab a few dozen napkins to catch all the buttery goodness that is going to be dripping down your chin

Serves 4
(Enough for 500g pasta)

Follow 💞 @vegansoyummy

Ingredients:
•Olive oil
•1 red onion
•4 cloves of garlic
•1/2 zucchini
•2 carrots, peeled
•250g mushrooms
•2 tomatoes
•2 tbsp. vegan butter / margarine
•1 tbsp. dried basil
•1 tbsp. dried oregano
•salt and pepper
•500ml sieved tomatoes
•2 tbsp. tomato paste
•3/4 cup plant based milk
•1/2 tbsp. flour

Directions:
•Add all the veggies (onion, garlic, zucchini, musshrooms, carrots and tomatoes) separately in a food processor to chop them finely
•Heat olive oil in a sauce pan (enough to cover the bottom of the pan) over medium heat
•Add onion and garlic cloves and cook them for about 1-2 minutes or until the onion becomes transclucent
•Add zucchini and carrots and cook for 2 minutes
•Then add the mushrooms and cook them for another 2 minutes before adding tomatoes, tomato paste, dried basil, dried oregano, some salt and pepper, vegan butter and sieved tomatoes
•Stir well, reduce heat to low, cover sauce pan with a lid and cook for about 20 minutes
•Stir sauce regularly
•Whisk together plant based milk and flour and add the mixture to the sauce
•cook for another minute
•Add some more salt and pepper if necessary and serve with pasta

2 Tbsp caster sugar⠀
1.8 L boiling water⠀
400 g roughly chopped seedless watermelon⠀
juice 2 limes⠀
ice cubes⠀
mint⠀
1 cup finely chopped watermelon⠀

Instructions⠀
Put tea bags, caster sugar and boiling water in a large heatproof jug. Stir well until sugar dissolves. Set aside to cool. Once cool, cover and transfer to fridge overnight to allow tea flavours to develop.⠀
Remove tea bags and discard. Put roughly chopped watermelon and lime juice in a blender, cover and blend until smooth. Pour mixture through a fine sieve into a jug. Stir watermelon juice into chilled tea.⠀

No Bake Passionfruit Slice

➕➕INGREDIENTS
BASE:
1 cup cashews
1 cup desiccated coconut
1 cup Medjool dates, pitted
1 tbsp lime juice
pinch salt
.
TOP:
1/2 cup cashews
3 passionfruit, pulped
1/4 cup coconut oil, melted
1/4 cup maple syrup
1/2 tsp vanilla extract
.
GARNISH:
3 passionfruit, pulped
.
⏩⏩Instructions

Line a 20cm x 20cm cake tin with baking paper.
Place base ingredients into mixing bowl, blend 20 sec/speed 8, scrape down sides and blend a further 10 sec/speed 8.  It should form a dough like consistency, if not, add a tablespoon of water and blend a further 15 sec/speed 8.  Press mixture into the base of the cake tin.  Cover and put in the freezer to set. 
Place top ingredients in mixing bowl and blend 1 min/speed 8, until smooth and creamy. Pour onto base layer then put back in the freezer.
Once firm, cut into 16 squares and store and serve straight from the freezer.
Drizzle with extra passionfruit to serve.

Place base ingredients into mixing bowl, blend 20 sec/speed 8, scrape down sides and blend a further 10 sec/speed 8. It should form a dough like consistency, if not, add a tablespoon of water and blend a further 15 sec/speed 8. Press mixture into the base of the cake tin. Cover and put in the freezer to set. Place top ingredients in mixing bowl and blend 1 min/speed 8, until smooth and creamy. Pour onto base layer then put back in the freezer. Once firm, cut into 16 squares and store and serve straight from the freezer. 4 cups broccoli florets
1 onion, chopped 
2 cups almond milk or any unsweetened plain plant milk 
3 cups filtered water 
1 1/2 tbsp “Not chicken” bouillon
1 cup celery,chopped
1 cup carrot, chopped
1-2 golden potatoes, chopped
1/2 tsp black pepper
CHEDDAR CHEESE SAUCE 
Juice of 1 lemon
1/2 cup raw cashews (soaked for 20 minutes in hot water)
1 cup carrot, chopped
1 cup potato, chopped
1 cup unsweetened almond milk
1/2 cup water
1 tsp salt
1/2 tsp pepper
1/2 tbsp garlic powder
1/4 cup nutritional yeast
Instructions: 
1. Soak raw cashews in hot water for 20 minutes. (Discard water and add into cheese sauce later 
2.In a skillet over medium-high heat add 1 tbsp oil then saute onion for a few minutes. 
3.Pour almond milk, two cups of filtered water and 1 1/2 tbsp “not chicken” bouillon. Whisk together until bouillon is dissolved. Bring to a simmer for about 5 minutes. Add potatoes and carrots cook for 10 minutes then add broccoli and celery; simmer until all the vegetables are tender, about 15 minutes.
6. Meanwhile make “cheddar sauce”. In a large pot bring 4 cups of water to a boil. Add copped potatoes and carrots to the pot and let cook for 15 minutes or until tender.
7. Once potatoes and carrots are cooked, Drain the potatoes and carrots (discard the water) and place all your cheddar sauce ingredients into a high-speed blender or food processor and blend until smooth. Pour the sauce into the pot and stir to combine. Simmer for 5 minutes and then serve hot! Enjoy. .⁣

Pineapple Fried Rice 🍍 
_________________________________________________
2 cups cooked rice of choice * 
1 cup chopped pineapple

Tofu egg:
1/2 block organic firm tofu
1 small onion
2 garlic cloves 
1/2 tbsp nutritional yeast 
1/4 -1/2 tsp kala namak salt 
Pinch of turmeric 
Pepper to taste 
Veggies: 
1 red bell pepper 
1  carrot 
2 spring onion
1/2 cup shelled edamame 
1 cup chopped broccoli florets 
1/4 cup corn
1/4 cup peas

To season: 
2 tbsp coconut aminos 
2 tbsp teriyaki style sauce ** Chili flakes to taste

Optional: 
Pineapple boat for serving 🍍 *previoulsy cooked rice works best, or at least let it cool down completely before using ** I used @traderjoes Island soyaki sauce (Makes 2+ servings)

As always first step is to prepare your veggies. Wash/peel bell pepper and carrot and dice them. Cut washed broccoli into small florets and slice spring onion. If using frozen peas, corn and edamame, take them out of the freezer and set aside. 
Finely dice onion and garlic and sauté them with a few drops of oil or a splash of water, starting with the onion, then adding garlic once onion is starting to brown. 
Break up tofu into crumbles with a fork, add it to the pan together with the spices and continue cooking for a few more minutes. I like adding a splash of unsweetened plant milk if texture is too dry. 
Set tofu aside and sauté carrot, bell pepper, broccoli and spring onion, then add peas, corn and edamame to the mix. 
Next, add rice and stir until everything is well combined and heated through. Add tofu back to the pan/wok and season with coconut aminos, sauce and some chili flakes to taste.
At the very end add pineapple and enjoy 😊

i’ve been very conflicted about what or whether to post on here because it feels so trivial (and insensitive) to go about my usual business talking about food/nutrition while much more serious issues are happening in the world. i very much recognize my privilege and understand that i will never understand, but i also feel that not speaking up when i have even a small platform feels wrong. i’m taking action by further educating myself to become that best ally possible in the fight against racism and social injustice. if anyone has any recommended resources or organizations to support then please let me know! i’ll also probably be posting less over the next several days because i don’t want to dilute the greater message, and honestly posting feels kinda weird. // dinner deets- greek stuffed red peppers with lemony basil tomatoes- recipe by @halfbakedharvest but i subbed whole wheat couscous instead of orzo because that’s what i had. the peppers are also filled with chickpeas, feta, and olives. she’s one of my fave food bloggers and always where i turn when i don’t know what to cook 🍅 because honestly who wants to think about cooking right now?? #stuffedpeppers #timeforchange #whatsfordinner

We are long time lovers of @gilbertscraftsausages, with their Bourbon Apple being a family fave. 🍎😋 This #recipe takes their delicious chicken sausages we love and makes them the star of a complete meal (yay for #onepan!). Get the full recipe below and be sure to look for Gilbert’s Chicken Sausages at your local store (you won’t be disappointed)!

WHAT YOU NEED:
➕ EVOO, approx. 1 lb of baby potatoes (cut in half), 1 onion; we used what we had- half a red and half a yellow (sliced), 1 small red bell pepper (sliced), 4 cloves of garlic (minced), a mix of dried herbs: 1/2 tsp thyme, 1 tsp basil, 1/2 tsp rosemary, as well as 1/2 tsp garlic salt, 1/2 tsp salt and 1/2 tsp black pepper, 5- 6 Apple Bourbon Chicken Sausages from @gilbertscraftsausages, and 3/4 cup dry white wine (we used a Sauvignon Blanc)

HOW YOU MAKE IT:
➕ Preheat oven to 425 and get out a deep baking pan or large baking dish as shown.
➕ Prep produce, measure out all of your herbs, etc.
➕ Place veggies, herbs/seasonings, and a bit of olive oil into your dish. Toss well to coat.
➕ Next, take sausage links and using a fork, poke several small holes all around links. Then, add them to the dish, laying on top of vegetables.
➕ Roast for approx. 25 min. Then, carefully remove dish from oven (veggies/sausage should be slightly browned).
➕ Toss #sausage and vegetables in pan juices. Add wine and toss again.
➕ Return to oven and roast for an additional 15 min. When done, potatoes should be tender and lightly browned. Sausages should also be browned.
➕ When time is up, remove dish from oven and serve! Yum! 🙌🏻😋

In a pot COMBINE, let it cook for about 20 min (or follow instructions on your rice box😊)1/2 cup water, 1/2 cup coconut milk, 1/2 cup brown rice, 1/4 tsp salt, 1/2 tsp vegan butter, 1/4 cup coconut flakes 🥓Tempeh
Boil tempeh for 10 minutes THEN marinade in 1 tbsp ACV, 1 1/2 tbsp sunflower seed butter, 1 tbsp soy sauce, 1 1/2 tbsp honey, 3 tbsp coconut milk, 1/2 tbsp coconut oil, 1/2 tbsp black pepper, 1 tbsp garlic — cook in a nonstick pan for about 5-10 minutes or until finished cooking 
Edamame —  heat up 1/2 cup unshelled edamame, I used the microwave but you can also use the stovetop, based on your preference

SO, I don’t know about y’all, but all of this activism has got me hungry for wholesome + yummy foods. ::I had this plant-based high protein bowl for lunch the other day inspired by a recipe @shopcocabana recently shared but I put a twist on it using sunflower seed butter + honey (so it’s not 100% vegan) IT WAS SO GOOD🥥 🥥Coconut Rice In a pot COMBINE, let it cook for about 20 min (or follow instructions on your rice box😊)1/2 cup water, 1/2 cup coconut milk, 1/2 cup brown rice, 1/4 tsp salt, 1/2 tsp vegan butter, 1/4 cup coconut flakes 🥓Tempeh Boil tempeh for 10 minutes THEN marinade in 1 tbsp ACV, 1 1/2 tbsp sunflower seed butter, 1 tbsp soy sauce, 1 1/2 tbsp honey, 3 tbsp coconut milk, 1/2 tbsp coconut oil, 1/2 tbsp black pepper, 1 tbsp garlic — cook in a nonstick pan for about 5-10 minutes or until finished cooking Edamame — heat up 1/2 cup unshelled edamame, I used the microwave but you can also use the stovetop, based on your preference

Is your mindset one of INSPIRATION🙌 or of COMPARISON🙎??. • What I mean is, are other people's successes or goals making you feel inspired to take on your own goals, or even just feel happy for them👯, OR is it causing to to feel down about yourself, compare you to them, and moving you father away from what you want😣. • I've been thinking about this a lot lately, and I feel now more than ever the term "stay in your own lane" has never been more relevant for me🙋. • During lockdown, I was in a really good place, and thinking back I think it was because I didn't have my freinds/ peers around me influencing my thoughts, and giving there (unintentional) opinions😯. • One example is one of my friends saying she would only go to the ball if she was "skinny" by that time😕😐... For someone who's goal is weight gain, I found this quite triggering and found myself feeling like maybe I was chasing the wrong goal😭. • So, instead of viewing my friends (probably joking) statement as either one to take as inspiration to chase my own goals, or even just to assure her that she is perfect as she is.... I instead compared myself to her and (even though I literally NEED to put on weight) I found myself doughting myself and not actively focusing on my goals as much😢. • At first I blamed my friend for this (and other people always talking about weight loss like it is the only thing people want), but then I realised.... Her saying this doesn't mean she thinks I shouldn't be trying to gain weight, it doesn't mean she thinks anyone should be trying to lose weight, it doesn't even mean she is trying to lose weight😃.... It was a passing comment, a joke, one that my over thinking mind took as a personal thing. • Anyways, if you got to the end of this LOOONNNGG caption, I guess what I'm trying to stay is, everyone has different goals, different backgrounds, different lives, ect👥 we are all so unique and different, and only WE know what's right for us💁. • Switch your mindset, stay in your own lane, and CELEBRATE your peers successes, don't compare yourself to them😘. • On my plate is: French toast, coconut yogurt, warmed raspberries, coconut, and maple syrup drizzled after🍁😋

PALEO LEMONADE🍋
Hey!! Time for a refreshing treat that is perfect anytime: after a run, before a run, or just with a snack. The taste is similar to regular lemonade, but with a slight twist with the accent of honey! It’s a must try!
SNS Paleo Lemonade:
1. In a saucepan on low heat combine, *1 cup lemon juice, *1/2-3/4 cup honey (depending on how sweet you like it, 1/2 for more tart, 3/4 for more sweet. you can also use a vegan alternative such as agave or maple syrup instead, *(optional) teaspoon of lemon extract
2. Stir all of the ingredients until thinner, dissolved, and we’ll combined. Remove from heat. 
3. Allow to cool, and you can mix in a bit of water to speed up the process.
4. Add to pitcher with ice, and pour in water to fill the rest of a standard pitcher (mine required 12 cups of water, but anywhere near that will keep the flavor just as strong). Mix well and then serve.
4. There you have it! You can add in lemon wedges or other fruits to the pitcher  to infuse if you like.
This one was so amazing! My whole family loved it! Perfect summer drink! I know you’ll love it too!

. . ⭐️ RECIPE ⭐️ 🌱2 cups pasta of choice
🌱1 medium onion, chopped
🌱1 clove garlic, minced
🌱1 cup mushrooms, chopped
🌱1/2 tin coconut milk
🌱2 tbsp nutritional yeast
🌱1 tbsp tahini
🌱1/2 tsp salt
🌱1/2 tsp cumin
🌱Juice of 1/2 lemon
🌱3/4 cup green peas
🌱1/4 cup vegan cheese (optional)
Cook the pasta according to packaging instructions. Meanwhile, sauté the onion and the garlic with water or oil in a non-stick frying pan for 2-3 minutes, until translucent. Then, add the mushrooms, and cook for a further 5 or so minutes to allow them to soften. Add the coconut milk, nutritional yeast, tahini, salt, cumin and lemon juice. Stir everything together really well and allow to thicken slightly before. Adding the green peas and the pasta. If the sauce isn’t thick enough, add cornstarch or gluten-free flour. Stir in the optional vegan cheese before serving.

Sometimes you just need the pasta! I used a tomato basil Asiago sausage, then added more tomatoes and more basil and handfuls of spinach. Toss in the linguine with some of the pasta water and it’s good to go. So simple and satisfying.

Simple bruschetta - the ultimate celebration of summer flavors and produce 🍅🌿🥖 ⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀ (not summer yet but eagerly awaiting) 
Ingredients:
3 cups chopped tomatoes - plum, beefsteak, or roma work best
2 garlic cloves, minced 
10 basil leaves, chopped into ribbons
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
Salt and pepper to taste
1 baguette or loaf of fresh Italian bread
1 whole garlic clove
Olive oil spray 
Instructions:
1. Mix together the chopped tomatoes, minced garlic, basil, olive oil, vinegar, salt, and pepper in a bowl. Cover loosely and let sit at room temperature for 20-30 minutes to marinate
2. Slice the bread thinly and place on a baking sheet. Spray each slice with olive oil spray and then broil for one minute on each side, or until golden brown 
3. Chop the additional garlic clove in half and rub each slice of bread with the garlic when it comes out of the oven
4. Arrange slices on a serving platter and add a spoonful of the bruschetta mixture on top of each. Garnish with additional basil if desired. Serve immediately* and enjoy!
*Can pre-make the bruschetta mixture, just toast the bread and assemble right before serving.

Ingredients:
1 kg chicken drumsticks, bone in & skin on
1 green chilli, sliced
sesame seeds for finishing

For The Marinade / Glaze:
2 tbsp honey
4 tbsp Dark Soy Sauce
1 tbsp Toasted Sesame Oil
3 tbsp lemon juice
1 tsp garlic powder
1 tbsp fresh grated ginger
Marinade for atleast 3 hours before baking

Cook in a baking dish at 375 for 20 minutes and then flip drumsticks and cook for another 20 minutes 
Serve with scallions and sesame seeds

•This Cuban Picadillo is really quick and easy to make!! ✨ It pairs great with rice, plantains, and makes delicious leftovers. Gardien Beefless Ground is a great alternative product with whole food ingredients. It’s sold for less than $5, contains 0 grams saturated fat, 0 grams cholesterol, and 12 grams of protein per half a cup serving.
•What completes the dish is the amazing Sazón seasoning. This gives it the Cuban flavor that makes this meal extra delicious! I also recommend adding any vegetables you want to this dish to make it your very own! 🌿

🌱 Ingredients
- 1 tbsp oil (or water)
- 1/2 white onion, chopped
- 1/4 bell pepper, chopped

Fermented carrot sticks on the road 🥕🥕🥕⠀⠀⠀⠀⠀⠀⠀⠀⠀

Making gut nourishing ferments is super easy, I made these on my last epic outdoor cooking road trip tour to show how easy it is to make! If you’re on the road for 2 weeks or more, it’s so worth the time. The fermentation process not only helps support the gut and immune function, it increases the bioavailability of nutrients which can increase Vitamin C levels by 300 times more than eating the vegetables raw!⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I found these flip top glass jars for 50c at the op shop on the road, found carrots at the market and I always travel with a bag of good quality sea salt like @celticseasalt 🙌⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here’s how:⠀⠀⠀⠀⠀⠀⠀⠀⠀
- wash the glass jars with hot water and a splash of vinegar (if handy), no soap or dirty sponges!⠀⠀⠀⠀⠀⠀⠀⠀⠀
- dissolve 1 heaped tbsp / 23 gms salt in 1 litre of water to make a salt brine (I use a little boiling water to help dissolve the salt then add filtered water, ensure the water is at room temp before adding to the jar)⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Peel and chop your carrots, if making carrot sticks lay the jar on the side to easily stack the sticks, then turn the jar upright when full and try and jam as many carrot sticks as possible to pack them tight and avoid floaties!)⠀⠀⠀⠀⠀⠀⠀⠀⠀
- fill the jar with the salt brine so the carrots are covered by at least 1cm of brine⠀⠀⠀⠀⠀⠀⠀⠀⠀
- close the lid, add LOVE and your desired healing intentions! 💖⠀⠀⠀⠀⠀⠀⠀⠀⠀
- set aside out of direct sun, for at least 10 days ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- store in cold box or fridge one opened 🥕🥕⠀⠀⠀⠀⠀⠀⠀⠀⠀

my heart is heavy. as most of ours are, as we try to navigate through all that is unraveling right in front of our very own eyes. ⁣

please speak up. please educate yourself. please do your part. but also, please take care of your mental health as well. ⁣

what i’ve realized while educating myself all weekend, is that i absorb all energies — good and bad. therefore, it then wreaks havoc on my own mind + body. i haven’t been able to sleep these last few nights, even with the help of cbd + other remedies. ⁣
⁣
last night i said to @nancylnevarez that i feel guilt when moments of happiness happen. i feel guilty to have privilege, because we do. i feel guilty doing things that bring me joy. i feel sad, angry and confused on what to do. but i remain hopeful that this will all bring about positive changes. that this will unite us all — the way we are supposed to be. ⁣
⁣
continue to keep your mental health in check. continue doing things that take your mind off of the stressors in life. because constantly soaking in the negativity + hate is not good for the soul + damaging to the mind. ⁣
⁣
amongst other things, being in the kitchen is my therapy but i will be taking a pause from sharing content + only sharing resources//stories, giving space for myself + others to #amplifymelanatedvoices. using this time to learn, listen and grow. taking whatever actions i can. in the meantime, i hope that these no bake birthday 🎂 cake dream truffles can brighten your moods a bit::⁣

in a food processor combine — 1 cup @bobsredmill almond flour, 1/2 cup @georgiagrinders cashew butter + 1/4 cup creamy almond butter, 3 tbsp. @nutiva coconut sugar, 1 tsp. pure vanilla extract, 1 tbsp. almond milk, 1 dropper @bloomfarmscbd + sea salt to taste. add in @gosupernatural sprinkles to the mixture + roll 1 in balls. refrigerate or freeze and enjoy!

VEGAN BREAKFAST BURRITOS - GF too, easy to make using no faux meat either! Teamed up with a few foodies for this breakfast creation (tagged). This #breakfastburrito is perfect morning, noon and night. The seasoned shredded potatoes are the perfect sub for taco meat! Check out the details:

Ingredients:
2 @sietefoods almond wraps or wrap of choice
1/2 cups of shredded potatoes, I used @cascadianfarm
1 tsp olive oil
Dash of chili powder
Dash of paprika
Dash of onion powder
Dash of garlic powder
1/2 cup diced bell pepper
1/2 cup diced onion
Handful of DF/vegan cheese or cheese of choice, I used @daiyafoods
Little bit of salsa and sour cream of choice, I used @followyourheart vegan sour cream
1/2 an avocado

Directions:
✨Toss shredded potatoes in the spices and olive oil
✨In a sauté pan, on medium heat cook the shredded potato in a little bit of ghee, olive oil or nonstick spray of choice
✨Immediately add in diced peppers and diced onions
✨Cook until browned, then remove from pan onto a plate
✨Lay each tortilla flat, add the potato and veggie mixture, add the cheese and roll into a burrito
✨In a sauté pan place the two rolled burritos and cook for 2 mins, flip to brown the other side.
✨Serve with the salsa, sour cream of choice and avocado

Penne w/ peppers, tomatoes & spinach in white wine sauce 🌿🍃 by @janetsmunchmeals .
2/3 lb. penne (or you fav pasta)
1 small red onion finely chopped
1 tbsp oil (or less if preferred)
3/4 tsp garlic powder
1/2 to 1 tsp kosher salt (to taste)
1/2 tsp pepper
1/2 tsp onion powder 
1 tsp dried oregano
1.5 tsp dried tarragon
1 cup white wine
2 cups vegetable broth
2 tbsp all-purpose flour 
1 1/4 tsp dijon mustard
1 cup sliced cherry tomatoes
1 cup roasted red peppers, sliced thinly (jarred) 
2 large handfuls baby spinach
2 tbsp finely chopped fresh parsley
Red chili flakes for garnish (optional)

Cook pasta in salted water until just barely al dente, drain. Meanwhile while water boils, cut your onion, add to large pan with oil, salt, pepper and the dried seasonings spices. Cook until onion is translucent, adding bit of water to prevent burning if needed. Add wine, let reduce by half. In small bowl, add the flour and 3 tbsp of the veggie broth, whisk until smooth. Add this and rest of broth, and the mustard to pan, stir well and let gently simmer (uncovered) until sauce thickens slightly, about 3 to 5 min. Add red peppers and tomatoes, cook 3 min more. Add spinach, and cooked pasta, stir, cover, let cook together for a couple min. Garnish with parsley and chili flakes if desired. 🌿🍃🌿🍃

We have some waffles in the house! Are you a fan of waffles or pancakes? I’m a fan of waffles when it’s the crunchy Belgian type. 😋 ⠀

If you want crunchy waffles you have to eat them right away. However, if you have made many and want to have them later for tea time, you know they are not crunchy anymore..just toast them in the oven and out come crunchy waffles again. 😃⠀

It’s pretty easy to make and the ingredients are nothing special, you may already have all these at home. 😉 You need a waffle maker though. ⠀

Ingredients⠀
🔸2 cups all-purpose flour⠀
🔸1 teaspoon salt⠀
🔸4 teaspoons baking powder⠀
🔸2 tablespoons white sugar⠀
🔸2 eggs⠀
🔸1 1/2 cups warm milk⠀
🔸1/3 cup butter, melted⠀
🔸1 teaspoon vanilla extract⠀
⠀
Directions⠀
🔹In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.⠀
🔹In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.⠀
🔹Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.⠀ @yamunachandran .⠀
