When you open a menu and only recognize a few dishes - exciting! You might think all thali and curries look the same, but they’re far different. Up until now most of the food I was eating was north Indian, but Dakshin at @sheraton_newdelhi specializes in cuisine from the south. It features dishes from five southern Indian states: Andhra Pradesh, Telangana, Karnataka, Kerala and Tamil Nadu. It might sound odd to try southern Indian food in the North, but southern Indian food enthusiasts stand by Dakshin. It's a proper representation and does the cuisine justice. Southern Indian food is so much more than dosas and idli (breakfast items) which is basically northern India’s idea of it. Indian food is regional like many ancient cuisines, and it takes an experienced palate to distinguish which curries are from what areas. There is overlap with spices in northern and southern Indian dishes, but the south uses kalpasi, fenugreek seeds, long pepper, white pepper, black pepper, and kokum which is less common in the north. The north is also wheat based and the south more rice due to natural agriculture, and coconut is also popular.
