Last night, I made gluten free flourless chocolate cashew butter pumpkin blended muffins (try saying that five times fast) by @sara.haven 🤩 This had only 8 ingredients and was one of the easiest things to make. Plus, I used my new cashew butter from @juliesreal that I got from my friends at @livinglocal.tv 😍😍
#muffinmonday dEATS: blend together 3/4 cup pumpkin purée, 1/2 cup of nut butter (I used the cinnamon vanilla bean cashew butter by @juliesreal which is gluten free, paleo, dairy free, peanut free, and soy free), 1 egg, 5 tbsp cocoa powder, 6 tbsp honey, 1 teaspoon vanilla, 1/2 teaspoon cinnamon, and 1/2 teaspoon baking soda until smooth. Pour batter into 9 muffin tins (I used cupcake tins for easy cleanup) and bake at 375 for 15-18 minutes.
This is the perfect healthy, fall treat with the perfect amount of pumpkin 🎃
I would be lying if I said I didn’t eat more than one last night 😹
